Premium PreviewChampagne sorbet (Pacojet/Ninja)
Champagne sorbet involves more than adding sparkling wine to a sweetened base. Champagne contributes water, acidity, aroma and, most importantly, alcohol, all of which influence both flavour and the behaviour of the mixture during freezing.
This version is designed for Pacojet and Ninja Creami and uses a stabilising system intended for alcoholic frozen preparations. A small amount of lemon reinforces freshness and supports the acidic profile without covering the character of the Champagne itself.
After preparation and maturation, the mixture is frozen directly in the processing beaker and spun at service. Managing the alcohol is particularly important because it lowers the freezing point: even a relatively modest amount can noticeably change the texture compared with a conventional fruit sorbet. The recipe is therefore built around the balance between keeping the Champagne clearly recognisable and creating a structure capable of performing correctly after deep freezing.
