Basil sorbet (Pacojet/Ninja)

This Pacojet and Ninja Creami sorbet builds the flavour of fresh basil on a bright water-and-lemon base. Lemon juice provides acidity, while zest adds a more aromatic citrus component that complements the green character of the basil leaves.

The basil is blended directly into the mixture before freezing. Its quantity can be adjusted within a reasonably wide range without substantially altering the balance of the recipe, making it possible to move from a more delicate herbal note to a much more pronounced basil flavour.

After maturation, the mixture is frozen in the processing beaker at a low temperature and spun only when required. This approach works particularly well with aromatic flavours, allowing the base to remain frozen until service and the final texture to be created on demand. The recipe is designed as a dessert sorbet, although the basil and lemon profile also makes it a useful starting point for less conventional pairings.

CucinaLi

Hi, I'm Andrea Rapanaro, founder of CucinaLi and author of Gelato Project.

I created Gelato Project to make artisan gelato more understandable, replicable and accessible even outside a professional lab. Starting from the meeting of cooking, technique and balancing, over the years I have developed recipes, guides and digital tools for people who want to really understand how a mix works, not just copy it.

With Gelato Project I pursue a practical, continuously evolving approach based on testing, method, curiosity and attention to the final result.
