Rum and feijoa sorbet

The story of this gelato begins with two special ingredients: rum from the Alma distillery (the first in Sicily dedicated to rum and following the whole chain from field to glass) and feijoa from Agricola Camillo Pacini, at the foot of the Pisan Hills. The rum in this recipe comes from purple sugar-cane strains, a native Sicilian variety revived by Annalisa, Hugo and Alejandro, three young producers who brought an ancient island farming tradition back to life. The result is a clean, round rum with notes of white flowers, apricot, raspberry, currant and a delicate marine nuance, which pairs with feijoa, an exotic fruit with a tropical, fresh aroma, grown with passion by the Pacini family since the 1970s. A gelato that tells the past and future of Italian agriculture through unique, unexpected flavours.

Gelateria De' Coltelli

Gianfrancesco Cutelli is a visionary master gelato maker who has turned his passion for taste into a path of research and innovation. Born in Milazzo and raised between Rome and Pisa, he carries in his DNA the legacy of Francesco Procopio De' Coltelli, the pioneer of artisanal gelato. After a long journey in food and wine, from restaurants to wine, in 2004 he opened his gelato shop De' Coltelli in Pisa.

His gelato is a tribute to quality and territory: he works with ingredients selected with extreme care, such as the pine nuts of the San Rossore Park, the Pisanello (an heirloom tomato between Pisa and Livorno), Piedmont PGI hazelnut and a selection of rare vanillas. Attentive to sustainability, he uses raw materials from ethical supply chains and has introduced blockchain technology to guarantee the traceability of the cocoa used in his gelato.

Awarded the Gambero Rosso Tre Coni and a Sherbeth Festival winner, Cutelli is the author of Avanguardia Gelato and an ambassador of Italian gelato culture worldwide. His philosophy combines technique, creativity and a deep respect for the product, turning every taste into an authentic experience.
