Oreo gelato (Pacojet/Ninja)

This Oreo gelato is formulated specifically for Pacojet and Ninja Creami. The biscuit is not used only as a final mix-in: part of it is blended directly into the base, bringing cocoa, biscuit and cream notes into the gelato itself.

The mixture starts with a dairy base enriched with cream and vanilla. After pasteurisation, the Oreos are allowed to soften briefly before blending, creating an even and recognisable flavour before any additional biscuit pieces are added.

Unlike a recipe designed for conventional batch freezing, the mixture is then frozen directly in the processing beaker and spun only when required. Extra Oreo pieces are kept separate and added after processing, so they retain more of their texture instead of softening completely during freezing. The same ingredient therefore works on two levels: blended into the base for flavour and added afterwards to provide contrast and a more recognisable biscuit texture.

CucinaLi

Hi, I'm Andrea Rapanaro, founder of CucinaLi and author of Gelato Project.

I created Gelato Project to make artisan gelato more understandable, replicable and accessible even outside a professional lab. Starting from the meeting of cooking, technique and balancing, over the years I have developed recipes, guides and digital tools for people who want to really understand how a mix works, not just copy it.

With Gelato Project I pursue a practical, continuously evolving approach based on testing, method, curiosity and attention to the final result.
